Fall is one of my all-time favorite times of the year, specifically the few weeks in October when the air turns crisp and the leaves start changing colors.
One for the BEST parts of fall is the abundance of Pumpkin infused foods! Growing up I only remember eating pumpkin pie at Thanksgiving. Now, you can get Pumpkin ANYTHING!
A few years back I came across this recipe and have loved using it ever since.
It is so simple, yet so delicious.
Combine one box of spice cake with one 15 oz can of pureed pumpkin (not pie mix).
I added ½ a cup of chocolate chips, but you can omit these if you like.
Fill the muffin cups with BIG spoonful of dough.
Bake at 350 degrees for 18-20 min.
The result is a moist mini-cake, full of pumpkin goodness!
