Chicken Noddle Soup

Burr…it has been cold up here in Eastern Washington. With snow and chilly temperatures in the 20’s, I find myself longing for summer. Don’t get me wrong, I love the snow and always will, but since I don’t get up to the ski hill that much anymore, snowy weather (especially in town) just isn’t as appealing on a daily basis anymore.
On cold days, soup always sounds good and inviting, especially a good chicken noddle soup. But I am not talking about canned soup, no it has to be home made soup.
Soup is such an easy meal to make, and often my fallback meal on the weekends when I don’t want to spend too much time in the kitchen and would rather be spending time with my family. Most of the time I just throw what I have on hand into a pot, let it simmer and add some spices to my likening. Since soups are fairly versatile, it is pretty hard to mess one up.
After making chicken broth I knew I HAD to make a pot of chicken noddle soup.

Chicken Noddle
  • 6 cups homemade chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 2 cups shredded chicken
  • 2 cups rotelle pasta
  • 1 tablespoon Costco brand Organic No-Salt Seasoning (I didn't add salt since I was going to be serving to Liam...just salted each individual serving).
I put all these ingredients (except the pasta) in the crock pot on high for 3 hours (or until the veggies are soft). Add the pasta and cook for another 30 minuets.
This soup turned out phenomenal. I really think it was because of the home made chicken broth. I am a true believing that home made is better then store bought broth now. Never again will I be tossing that carcass away.
Liam also really enjoyed the carrots and noodles.
He had TWO servings and gobbled it down so fast, I thought I was going to find half of it in his high chair…but he actually ate it all! This might be his new favorite food. I am so glad I am able to provide healthy and nutritious meals for my child.
