Taco Tuesday {Healthy and Filling Salad}

I love Mexican food!! I could probably have it every day.

Chips and Salsa. Guacamole and Sour Cream. Rice and beans. Fresh tortillas! Mmm…so good!

However, some of those items aren’t very healthy, especially on a regular basis.

Taco Salad

When the taco craving hit me today, I decided to whip up this healthy and filling taco salad instead of taking the family to our favorite Mexican restaurant. 

It was very easy and made enough for dinner and leftovers the next day. Score!

Brown the ground beef, onions and garlic. Drain any fat (since I use grass fed beef, it is very lean and there is no grease).

Wash and chop the lettuce. Drain the beans. Defrost the corn.

Mix the sour cream, salsa and lime juice together.

In a large bowl mix together vegetables and dressing.

Serve salad topped with ground beef mixture and a sprinkle of cheese.  Enjoy!

Stan, who is not a salad eater, loved this and even had seconds!! Yeah! Such a yummy and fun way to incorporate vegetables into your families diet!

Ingredients:

1 pound lean ground beef – we used local grass fed

¼ cup diced onions

1 large garlic clove

1 can pinto black beans – drained

1 cup frozen corn

1 large head of romaine lettuce

1 cup of chopped cherry tomatoes

1 cup shredded cheddar cheese

Dressing:

1 cup sour cream

½ cup salsa

Juice from 1 lime

I had enough leftovers for two more salads. I had been seeing the “salad in a mason jar” idea posted on Pinterest for the last year and have never tried it. With all these ingredients, I thought it would be a perfect time to experiment with the idea and hopefully avoid a soggy salad the next day.

Mason Jar Salad

I layered all the ingredients into a quart sized mason jar.

Dressing, tomatoes, beans, corn, ground beef, cheese and lettuce.
